San Nicola is everywhere…BRAZIL

Brazilian Pao de Queijo and San Nicola PDO Coppa…the pair at the Top!

Its origin is uncertain but the earliest texts documenting their preparation date back to the 18th century. At that time in Brazil there was a shortage of wheat flour so it was replaced with the local cassava flour with which these rolls are made, in addition to cheese from which they derive their name “cheese bread”.
