We prepare spelt crackers…
In a large bowl, combine 250 g of spelt flour, 6 g of fine salt and a few fresh thyme leaves. The amount of the thyme leaves varies according to personal taste; we put those of 4 four sprigs.
Add 25 g of refrigerator-cold butter in chunks.
We mix with our hands until the mixture has the consistency of sand between our fingers.
Add 80 g of white wine, 50 g of evo oil and continue stirring.
When the dough is firm, transfer it to a floured pastry board and roll out the dough about 5 mmm thick, trying to give it an almost rectangular shape. With a pastry cutter or simply with a fork prick the dough And cut it into diamond shapes about 5/6 cm on a side. Time to turn the oven on static mode to 180° .
We place the crackers on a baking sheet with parchment paper and brush them with a little oil and salt to taste.
Bake for 25 minutes, and if we like them particularly crispy, leave them in the oven 5 minutes longer in fan oven mode.
Let them cool, and when they are warm, we can taste them with San Nicola PDO bacon!
