Preparing the Gorgonzola cream

Stem 100 g of gorgonzola cheese with 50 g of milk in a pan. When the cheese has totally melted remove from the heat and allow to cool. To give to the cream the right consistency, it should not be totally cold.

Divide the rosette in two halves, lay generous slices of San Nicola PDO Bacon, choose the vegetables that best suit your palate from the Sottobosco Valtaro giardiniera, scatter clumps of gorgonzola cream and walnut kernels.
