San Nicola is from Parma as…the spongata
Spongata is a popular dessert in the Parma area, typical of the Christmas season.
In fact, it is always present on the Christmas table of Parmesans along with panettone and nougat.
Its name comes from the Latin word “spongia,” meaning “sponge” because of its appearance and shape; the typical filling consists of honey, macaroons, almonds, walnuts or hazelnuts, pine nuts, raisins, and candied fruit.
The dough is then pitted on the surface to make it easier to bake.
