San Nicola is from Parma like…the Anolini
Anolini, or “anolen” in the Parmesan dialect, are an excellence of our cuisine!
The first appearances of anolini seem to date back to the late 1200s during the lunches of the wealthy classes, and their recipe was jealously guarded by the nobles, keeping it secret and for their exclusive use!
At some point, however, thanks also to the writer and gastronome Pellegrino Artusi, the recipe spread to the poorer classes, becoming the typical dish of Parmesan popular cuisine!
